      <title>Coconut fat</title>

      <description>&lt;div&gt;Recently I've been adding coconut to my diet, in the form of coco-milk or oil for cooking.
&lt;br/&gt;
&lt;br/&gt;Coconut has a bad rap in the US, due to some misinformation about it causing heart disease and such. The basis of this info was a study done in the 60s where lab rats were large amounts of coconut oil and died horrible deaths. However, they were fed HYDROGENATED coconut oil, which of course is definitely bad for you.
&lt;br/&gt;
&lt;br/&gt;Coconut oil has no cholesterol, and is actually thermogenic (fat-burning).
&lt;br/&gt;It tastes damn good and will satisfy your fat cravings in a healthy way.
&lt;br/&gt;Plus, current research shows that it helps your body fight of disease causing pathogens (virus, bacteria, fungus, etc)

&lt;br/&gt;A recipe I've been exploring is making oatmeal with coconut milk instead of regular milk or water. It's super-energising and very satisfying.&lt;/div&gt;

      <title>Mango Salsa!</title>

      <description>&lt;div&gt;A great way to add oodles of flavor to any lean meat is with a great fresh salsa...  Here's a fav of mine:  
&lt;br/&gt;
&lt;br/&gt;Mango Salsa!
&lt;br/&gt;
&lt;br/&gt;1 fresh mango(pitted, diced into 1/4 inch squares)
&lt;br/&gt;1/4 cup fresh red bell pepper
&lt;br/&gt;1/4 cup fresh bermuda onion
&lt;br/&gt;1 tsp. fresh mint leaves (chopped) *
&lt;br/&gt;1 tblsp. fresh lime juice
&lt;br/&gt;1 tsp. minced jalapeño chile pepper 
&lt;br/&gt;
&lt;br/&gt;* can be substituted with 1/4 tsp. dried mint
&lt;br/&gt;
&lt;br/&gt;Combine all ingredients into a small bowl, stir, cover and refrigerate for 1 hour prior to serving.  Spoon over main meat dish.
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;&gt;I have served this over grilled tuna steaks, grilled chicken breast and over roasted pork loin.  There is no fat added and the flavor is just out of this world!  Really waked your mouth up and come to life!  This stuff is just good!  A good side dish to accompany this little marvel of healthiness is couscous or a nice wild rice... YUM!

&lt;br/&gt;What I hope is that we, as a Tribe, use this space to share recipes that are heart healthy, thigh slimming, and full of carefree and carb-conscious crunchy goodness! ;o)

&lt;br/&gt;I know that I've a handful of recipes that could even fool my Mom in all her 'butter loving, please pass the potatoes, here's a cookie for your boo-boo' motherly wonderfulness, and  I'd be more than happy to share.  
&lt;br/&gt;
&lt;br/&gt;Practically any type of recipes that currently makes your mouth water could probably be converted into something that is not only tasty as all get out, but 'good for you' as well.  Put your thinking caps on...  
&lt;br/&gt;
&lt;br/&gt;So, waddaya say?  Share a recipe.  Learn a recipe.  Share a bad-into-good conversion recipe story ... We all might live longer, healthier lives for the effort.
