Mango Salsa!

A great way to add oodles of flavor to any lean meat is with a great fresh salsa... Here's a fav of mine:

Mango Salsa!

1 fresh mango(pitted, diced into 1/4 inch squares)
1/4 cup fresh red bell pepper
1/4 cup fresh bermuda onion
1 tsp. fresh mint leaves (chopped) *
1 tblsp. fresh lime juice
1 tsp. minced jalapeƱo chile pepper

* can be substituted with 1/4 tsp. dried mint

Combine all ingredients into a small bowl, stir, cover and refrigerate for 1 hour prior to serving. Spoon over main meat dish.


>I have served this over grilled tuna steaks, grilled chicken breast and over roasted pork loin. There is no fat added and the flavor is just out of this world! Really waked your mouth up and come to life! This stuff is just good! A good side dish to accompany this little marvel of healthiness is couscous or a nice wild rice... YUM!
